I want to know this too! I've tried changing it in the task manager but as soon as I execute a stroke it goes to a lower priority. It's annoying because when I'm running a bunch of stuff at the same time on this old computer, the gestures don't register so I have to repeat them.

I don't think it is possible, I tried this too.

I (obviously) don't use SI anymore, but IIRC, it switches the priority to High once you start drawing a gesture, then resets to Normal when complete.

Open Task Manager and bring the SI process into view, then start drawing a really long gesture so you can see if it changes while drawing.

IIRC = if I recall correctly.

I was referring to how StrokeIt (SI) currently works...as far as I recall, that is =)
